Let’s walk you through the process so you can get started with confidence.
Step 1: Brew Your Tea Base
Start by boiling 4 cups of water. Once it’s bubbling, add 2-3 tea bags or 2 tablespoons of loose-leaf tea.
Let the tea steep for about 10 minutes before removing it. Stir in 1 cup of sugar while the tea is still warm, ensuring it dissolves completely.
Next, pour the sweet tea into your glass jar and top it up with cool water to bring the temperature to room level.

Step 2: Add Your SCOBY and Starter Liquid
Once your tea has cooled, gently place the SCOBY into the jar along with 1-2 cups of starter liquid (this could be kombucha from a previous batch or unflavoured store-bought kombucha).
The SCOBY might float or sink—either is fine.
Cover the jar with your cloth and secure it with a rubber band.
Step 3: Fermentation Begins
Place the jar in a warm, dark spot where it won’t be disturbed.
Let it ferment for 7-10 days.
During this time, the SCOBY will work its magic, turning the sweet tea into tangy, probiotic-rich kombucha.

Step 4: Taste and Bottle
Start tasting your kombucha after a week. If it’s tangy enough for your liking, it’s time to bottle it.
Remove the SCOBY and save some liquid as your starter for the next batch. Pour the kombucha into bottles, leaving room for flavour additions like fruit or herbs.
Let the bottles sit at room temperature for 2-3 days to build fizz, then refrigerate.
