This delicious sparkling probiotic is a tasty alternative to kombucha, with a more subtle flavour that sucks up the flavouring.
Tibicos or water kefir is a delicious fermented probiotic drink that is brewed with kefir grains, water and sugar. The grains form as hard granules on the pads of the Opuntia cactus found in Mexico. Thirty grams of grains turn into infinite amounts of water kefir.

Water Kefir Brewing Instructions
For your first litre of water kefir, you will need:
- 30 grams of water kefir grains.
- 30 grams of sugar. Raw organic sugar is the best.
- 4 grams of flavouring. About 2 tablespoons of hibiscus, lemongrass and ginger.
- A fermentation cloth that's breathable, like cotton or a tea towel.
- 1 litre of hot water. Boiled tap water is ok, spring or mineral water is best.
- Fermentation vessels. Glass, ceramic, food-grade plastic or stainless steel. You will need a second vessel for flavouring, along with a stainer and a whisk.
To brew your own water kefir, follow these steps:
- Dissolve the sugar in the hot water with a whisk.
- Let the water cool down to room temperature, between 10-35 degrees celsius.
- Pour mixture into container 1 and add your kefir grains.
- Put a cloth on top with a rubber band. Leave it to brew in a cool spot for 2 days. It will get more sour the longer you brew.
- Strain the kefir grains into another vessel - this is your flavouring vessel.
- Flavour. To flavour your brew, add infusions to the strained liquid and mix well. You can leave it for a couple of hours or a couple of days. Bottle it. Once fizzy, keep them in the fridge.
- Repeat. You can now repeat the brewing process to make a never ending supply of kefir. Add the stained grains to more sugar and water to start the process again.
Hot tips:
- Yumminess: Add a tablespoon of molasses or dried frit to keep your ferment healthy.
- Warmer temperatures will result in a faster ferment while cold weather will slow down the process. Optimal temperature is between 23-29 degrees Celsius.
- Stronger is better: keep the grain to water ratio of the kefir at least 30 grams per litre to ensure healthy brewing.
- Flavouring ideas: add fruit juice, dried fruit, herbs, spices, fresh fruit or steep flavoured teas into your second vessel for flavouring.
- Keep it cool: make sure anything you add to your culture is less than 35 degrees Celsius.
- Carbonating kefir: bottle it, let it rest in ambient temperatures for a day or two, then test if it's sparking. Make sure to put it in the fridge as overly sparkling kefir may explode.
- Twist: try coconut water instead of sugar water. It's magical!
